Sorry don't know where to ask this, but say I want to know how many shots a player had on goal in a given game on a given date, please where can I find that?

hockey reference has that. Just search a player and click on the relevant year, it will show all the list of games and their stats

The NHL site itself has this, although not that great for querying. You basically have to go to the stats page and then you can see a game log for them

You can refine it further. Choose "By Game" and then you can choose a date range under that.

Naturalstattrick is also good for this, also if you want to see it broken down by the shot attempt ‘funnel’, on a game by game or annual+ summary (up to three seasons aggregated)
Shot attempts > Fenwick (unblocked shot attempts > Scoring Chance (from slot) > High Danger (from a slightly different definition of scoring chance) > Goals
It will also let you toggle the views between individual tallies, on-ice rates, relative to teammates.

Hockey reference is so good because you can also highlight a number of rows to grab a tally over that span of games.
You can also copy tables into Excel and nerd around yourself with pivot tables or whatever.
